I love this! I hope others share more but I like to try and eat vegan as much as I can and also healthy! I came across this site a few years ago and have gotten SO MANY recipes off it. They're all delicious and easy to make, even for someone who hates to cook like me. My go to meal is for my husband, to take stress off me! Usually scrambled eggs or cheese omelet and toast are good for him when I don't have time to prepare, cook , or when I don't feel well.

I've learned to be creative at restaurants.
Omelets with no toast or potatoes, but a side of veggies, maybe coleslaw. I'll go to Italian restaurants and ask them for a pizza ... without the pizza. I eat vegetarian, so I ask them to make a baked casserole of mushrooms, tomatoes, spinach, onions, black olives, maybe green peppers, and make it nice and cheesy. They'll make it for me, typically charging $8 - $10. A sandwich, like a veggie burger (or hamburger) without the bun. And a salad with tuna on top works fine also.
I also make a simple soup at home, my kind of recipe. Two cups of broth, a can of chopped tomatoes, a can of mixed veggies, heat to a boil and it's ready. Lately I've added 4 - 6 tablespoons of salsa to deepen the tomato flavor. It's great cold too, when I add hot sauce. I've added cheese or shrimp to that at times.

Hi everyone!
It's been a while since I've been on here. I was inspired by a post I read on here that broke down the best vegetables for someone living with type 2 diabetes and I was wondering, what are some of your favorite dinner recipes? Also, what are your favorite recipes on a budget/in a hurry for lunch?
I want to try some new things for my fiance!
